Money Gifted, Now Being Demanded Back

Okay so this guy that was really into me but it never worked out for various reasons, said he wanted to basically gift or donate me money to help me move out into my new place and get my new life established. Total it was around 8k. He said multiple times he did not want me to pay it back. Note - he gave another he was trying to be with 10k - she stopped talking to him and he never made her pay him back.
Then he heard a rumor I was with someone else or back with me except (both untrue) he then took back what he said and messaged me at work saying he wanted it paid back. I just agreed to pay it back but i wasnt able to pay it in full (I always brought up through the few months this was going on that I could pay him back, he'd get upset saying to stop saying that, that I didnt have to and he wanted to just help a friend). I paid $100 to start the payments paying him back. But- heres the kicker- Now, I have vet bills quickly piling up, and I absolutely cannot afford to pay him back at the moment on top of all my other bills. I told him this, and he basically said "sorry, but this isn't how this works. Stating you cant "pay for a while" without stating a date is grounds for pursuing legal action. I do not want to take this to court so I'll seek legal advice."
My question is, can I take him to court for this when this money was gifted in the first place? And can he take me to court for not being able to make payments on this 8k right now? I do have in text evidence where he said not to pay him back and all that. and from when he changed his mind. tia
