2 Parents Going Out Of Country Without 3yo Child - Letters Incase Something Happens To Us Or Her

Location: Alabama My husband and I are leaving out of the country for 9 days and our 3yo child is staying behind with my mother and father.
If I type up a letter basically saying if something happens to us (death), that I was full custody to be given to my mother and father, and then get it notarized. Will this hold up or help in that situation?
I think if that was the case, I do believe the state would pick my parents to have custody of her. She has been present in her life since birth and VERY involved with her upbringing. She is 45, good heath for the most part.
Next,
Should I write a letter stating in an emergency and I am unable to be contacted, my mom has power of attorney rights to make decisions for her care? And getting it notarized.
Will this stand or be helpful in this type of situation?
My husbands parents are 4 hrs away only seen her maybe 7 times. They are 55F, poor health and 80m decent health for his age. They have 30ish cats. There house is 1/2 remodeled since home was messed up from a hurricane a few years ago.
Husband has a brother, he has disowned/completely cut contact with his parents several years ago and then finally my husband last year. I do not think he would swoop in and try to take custody of my child but if he did he 100% has the financial power to fight. (He has never met my daughter)
