Proper Hotels goes seed oil-free in all kitchens, launching a new wellness era with Zero Acre Farms and elevated guest experiences

Proper Hotels and its wellness-focused offshoot By Proper are introducing a sweeping update to their hospitality experience: all Proper kitchens will now operate free of industrial seed oils.

The transition, made in partnership with Zero Acre Farms, marks a national first for a hotel brand. Canola, sunflower and soybean oils have been phased out across the portfolio, replaced with high-performance, non-seed oils, like Zero Acre’s fermentation-derived cooking oil. The oil is now used in all Proper deep-frying: a cleaner, more health-conscious option.

Proper has a broader wellness initiative structured around five pillars: Nourishment, Movement, Recovery, Rest and Connection. The culinary program already emphasizes local, organic produce, regenerative grains, functional ingredients and low-temperature cooking to preserve nutrients. As part of the latest rollout, Manukora Manuka Honey, known for its gut health and immune benefits, will now be available at complimentary breakfast stations across all Proper properties.

Proper’s wellness philosophy extends beyond the kitchen. Each hotel offers rooftop yoga, strength and mobility classes, cold plunges, infrared saunas and red light therapy, all housed within interiors designed by Kelly Wearstler to promote calm, restoration and deep sleep.

Select locations, including Santa Monica and Austin, have recently expanded their Proper Club offerings to include movement studios, recovery suites and tailored nutrition programs for both members and overnight guests. The updates will debut at all locations this spring, including The Shelborne by Proper, which recently reopened in Miami Beach.
